After a few quiet month to settle to my new  "Head of Gourmet Dpt" position for the Mall Group in Bangkok, I was back last week on the saddle and went flying again to join  a group of SEA buyers to expo Milan (very disappointing) invited by Italy Trade Office.
One of the Highlight of the tour was to visit the Auricchio Factory in San Giuseppe near Milan.
 
The Motto of the factory is "Fatto a Mano. Da Sempre" what could be translated as Hand made for ever or when tradition meet the future.
To give you just a few tips, Aurrichio has been created in 1877 and now own 40% of Provolone market share in the world. 
Distributed in over 140 countries. So Il Capo dei Capi is there in the world of Provolone.
 
The factory is one of the most modern that i have been able to visit in the past years but yes without the Artisan touch and work, nothing else would matter. 
 
Every thing is computerized but what matter most is the shaping of the Provolone hand made by teams of 2 craftsmen working around the clock during high season and achieving 200 pcs of 50 kg of fresh curd shaped per 8 h shift and stored in several tubes going from  5kg to 100 kg Cheeses shape.
 
Every thing was amazing, from the craft to the storage and distribution system. Just a great way to keep the old tradition but speeding up to serve the world with the best of today's technology.
